I’ve always loved discovering new dining destinations. Although it’s easy to play it safe with a trip to Chili’s and order a dish you know and love (cue the “Baby Back Ribs” jingle), there’s something special about supporting a small business where the chef—who might also be the owner—clearly puts passion into every plate. Plus, you never know when you might find a new foodie favorite. I’m grateful to my family for the foundation they laid for me and the opportunities they provided. I hope to do the same for my daughter. BEST WORDS OF WISDOM YOU’VE RECEIVED?

Eileen Speaker grew up in the Bay Area but moved to the East Coast in grade school, and it wasn’t until many years later that she finally had the opportunity to return to her home state. Prior to moving to Roseville, she and her husband, Joe, had a long-distance relationship for three years, as both of them completed graduate school on opposite sides of the country. It wasn’t easy, but these days, the couple is happily reunited—not to mention the proud parents of two-year-old daughter, Delia. “California always felt like home,” Speaker shares. “My parents have roots [here], so my mom likes to joke that it was all part of a master plan to marry a native Californian.” Speaker currently works as the grants manager at Placer Community Foundation,

an organization that facilitates responsible and effective philanthropy in the region. The most rewarding part? Helping local donors carry out their charitable wishes. “You don’t have to be a millionaire or a billionaire to make a difference,” she explains. “I love seeing the generosity of local people. It solidifies the work I do and makes me love Placer County even more.” In her spare time, she serves on the City of Roseville’s Grants Advisory Commission, in addition to promoting women’s volunteerism as a member of the Junior League of Sacramento. “You never know when things might change in your own life,” Speaker says. “You have to give back when you have the means to do so.” —Amber Foster

WHAT’S IN SEASON: ASPARAGUS One of the first foods to signal spring at the farmers’ market is asparagus. While the most common type is green, you might also see two other hues—white, which is more delicate, and purple, which is smaller and fruitier in flavor. No matter which type you chose, asparagus is a delicious, versatile vegetable that can be prepared many ways, including raw in salads. Loaded with nutrients, it’s a good source of fiber and folate, plus vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream to the cells. What’s more, it’s a natural diuretic, helping release fluid and rid the body of excess salts.

A Feast for the Eyes

Known for her illustrative work in The Art of Real Food cookbook, Paula Amerine often paints food and farm scenes, using oils, acrylics and mixed media. Displaying her work at OLAS Studio as well as Sparrow Gallery, Amerine is busy creating artwork to be used by Aubur n’s One Book One Community to help advertise their event this year, as well as preparing for General Gomez’s California exhibit next month. “I’m well respected for the artwork I produce and people have been very supportive—[even putting my paintings] in their homes,” says Amerine, who’s passionate

about advocating for local farmers through her artwork. “I have worked hard to create a volume of work that captures the spirit of where I live in Placer County.” HLB: TELL US ABOUT YOUR EXPERIENCE STUDYING ART IN SPAIN AS A TEENAGER. PA: My parents hired a Spanish painter to teach me oil painting, so I’d take a bus into Madrid near the Prado Art Museum on Saturday mornings. I’d arrive early due to bus schedules, giving me time to have a creamy hot chocolate before stopping at an art supply store. My teacher’s apartment was very small and always photos by DANTE FONTANA

myth Antiperspirant causes breast cancer. truth Antiperspirants—which reduce underarm sweat—and

deodorants—which cover up odors—do not cause breast cancer, says Dan Herron, MD, director of Women’s Imaging at Mercy Imaging Center. “This myth may persist [since] we ask women not to use either prior to a mammogram, [as] the particles they contain can falsely look like calcium deposits on the mammogram and raise a false alarm of cancer,” he explains. “The Journal of the National Cancer Institute in 2002 reported on a study that showed no increased breast cancer risk in women who used antiperspirants or deodorants. Additionally, the National Cancer Institute and the U.S. Food and Drug Administration reports no evidence that aluminum—the active ingredient in antiperspirants—nor the infrequently added paraben preservatives cause breast cancer.”

chair at Dignity Health Medical Foundation’s Davis clinic, clarifies what it really means when you say “the flu.” According to Sens, “influenza is a respiratory illness caused specifically by the influenza virus [that] causes high fever and a severe cough and can cause pneumonia.” That said, you won’t get the flu after getting the flu vaccine. “In a randomized double-blind study, volunteers were either given a flu vaccine injection or a salt-water injection. The only difference in reaction between the two groups was the group who received the vaccine had more soreness and redness at the injection site,” she says. “There was no difference between the groups in terms of fever, muscle aches and pains, cough or illness of any kind.” With few exceptions, everyone six months of age and older should get a flu vaccine every season, she says.

Yet autism rates continued to rise. “The issue is not vaccinations, but more commonly numerous factors—including prenatal risks, maturity when born, genetics and environmental issues,” he says. “Because vaccines occur when children are also developing—at two months, four months and six months— this often coincides with parents becoming aware something may be wrong, [which is] why parents often confuse what they see as cause and effect, instead of separate risk factors and issues that cause the observed changes.”

Placer Rescue Mission A Hope to End Homelessness

It’s an ambitious plan—building a multi-acre campus that will dramatically reduce or even end homelessness in Placer County—but the people behind the proposed Placer Rescue Mission (PRM) believe it’s possible. “We have a lot of services that meet temporary needs, but the real need is for a more permanent solution that moves people out of homelessness,” says Brooke Stephens, a local attorney and president of the PRM board. The idea for the mission—which will be affiliated with the Association of Gospel Rescue Missions—came about after a 2015 report on homelessness in Placer County found the rate of “chronic homelessness” (people who’d been homeless for more than a year) to be three times higher here than the national average. County leaders found the report eye-opening and agreed

with its conclusion that bold solutions— and the political will to implement them— were the only chance of really addressing the homelessness problem. And it’s clear to see that the vision and political will are coming together. Presently, Placer County has a 26-acre slice of land available and has provided $44,000 for a feasibility study to assess if the area is suitable for the proposed campus. additional units for women and families, a health clinic and an emergency shelter with room for 50 men and 50 women. What makes the project especially audacious, however, is that housing is only the start. “We’re modeling this vision after the Orange County Rescue Mission, which not only provides homes and shelters, but also brings together the various service organizations, on site, to help the people who live there,” Stephens says. In other words, PRM would bring together many community organizations to connect people with medical and mental health services, job training, counseling, legal help, addiction recovery and other resources—all “under one roof.” The idea is to help residents become selfsufficient and eventually have an apartment or home of their own, in a way that’s simply not possible in the current environment. The cost of building the mission still has a few variables, so right now the goal is to reach a threshold of $1 million in fund-raising, and donations are needed. What is known is the annual operating budget of the mission will be about $2 million. “To put that in perspective, it’s estimated that communities spend $40,000 per person, per year, on chronic homeless individuals ($7.2 million annually),” Stephens says. “PRM can save the county $5 million a year, to say nothing of the societal benefits of people getting off the street and becoming working, productive members of [society].” What’s really driving the dream, however, is compassion. “As a faith-based organization, we believe everyone is worthy of dignity and assistance in life’s journey...helping people get free from addiction, mental illness and homelessness, and seeing them transformed by God into healthy people equipped to participate in society is our goal.” facebook.com/placerrescuemission

After a nearly five-month remodel, Timbers at the Lodge Restaurant in Sun City Roseville has unveiled their revamped restaurant and sports bar. Alterations included enlarging the dining room and enclosing the patio to become the newly expanded lounge—complete with hardwood floors, glass viewing panes with vistas onto the course, and large flat screens hanging strategically from three corners of the bar. According to Food and Beverage Director Jason Smith, “It just made more sense to separate the bar from the dining room.” Now diners in the lounge can root for their favorite professional “gaffer” on the tube while ordering Arnold Palmers and The thickly Caesar salads—before, after or during their sliced, braisedround. The Mad Teriyaki // I’ve learned that it’s impossible to dislike teriyaki. I mean, how can you go wrong with meat covered in a lip-smacking sauce? That sauce is hard to get right though; luckily for locals, The Mad Teriyaki has mastered it through some mysterious alchemy, and is flooring customers with their perfect teriyaki offerings. I usually go for their Chicken and Steak Plate. It’s perfect for us indecisive folk who prefer not to have to choose between meats, or for those of us who like to have our cake and eat it too—only here, it’s mouthwatering bites of juicy chicken and tender steak covered in smooth, glazed-to-perfection teriyaki sauce that’s topped with green onions and toasted sesame seeds, and served alongside soft coconut rice. For the sides, I like to get their macaroni salad—a cooling Hawaiian-inspired palate pleaser with black olives and celery, and the green salad with house-made raspberry vinaigrette and crisp fried noodles. Delicious doesn’t even begin to describe it. The meat is glorious, and the accompaniments complement each other well. Call me crazy, but I love The Mad Teriyaki; better still, I’m mad about it. FRIED CHICKEN WITH SPICY BUTTERMILK SLAW Korean-fried chicken, chicken karaage, Southernfried chicken—however you like it best, there are few things more satisfying than shoving piping hot deep-friend chicken into your gob. Although National Fried Chicken Day is celebrated on July 6, we can all get into the spirit any day of the week with this ridiculously good sandwich, served with crunchy, spicy slaw. And not a bucket in sight… MAIN INGREDIENTS 4 chicken thigh fillets Vegetable oil, for deep-frying Mayonnaise, for spreading 2 bread rolls, sliced in half MARINADE 1 1/4 cups buttermilk 1 tbsp. black pepper 1 tsp. mustard powder 1 tsp. cayenne pepper COATING 1 cup all-purpose flour 2 tbsp. baking powder 2 tbsp. onion powder 1 tbsp. garlic powder 1 tsp. salt

SPICY BUTTERMILK SLAW 1/2 cup buttermilk 2 tbsp. mayonnaise 1 tbsp. sour cream 1/2 tsp. cayenne pepper Squeeze of lime juice Salt and pepper, to taste 1 medium-sized carrot, grated 1/2 cup red cabbage, shredded 2 spring onions (scallions), thinly sliced

To make the marinade, combine all the ingredients in a container or Ziploc bag. Add the chicken, and massage the marinade into it until well coated. Set aside in the fridge for a minimum of 2 hours, but preferably overnight. Combine the

coating in a Ziploc bag. Heat enough vegetable oil for deep-frying to 350-degrees Fahrenheit or until a cube of bread dropped into the oil turns brown in 15 seconds. Working with one piece of chicken at a time, toss in coating mixture, until completely covered. Dip the chicken back into the marinade then coat again in flour and spices. Carefully transfer the chicken to the hot oil and fry for about 10 minutes, until golden brown and cooked through. Drain on paper towel. Meanwhile, make the slaw. Combine ingredients through lime juice in a small bowl and whisk until well combined. Season with salt and pepper to taste. Combine the remaining ingredients and toss through the dressing. Spread mayonnaise on the cut sides of each roll then add a large spoonful of slaw followed by the chicken. Top with the remaining roll halves and eat immediately. Serves 2. PAIRS WITH...

Describe your business. Did you find it, or did it find you?

I run a licensed in-home family child care program in the Maidu neighborhood of East Roseville, and provide before- and after-school, 24-hour and school holiday care for school-aged children in grades one through six. We have an exceptional teacher-child ratio of one to seven with a focus on outdoor activities and developing social skills. After a 10-year career in structural engineering, I decided to do something closer to my gifting and share more time with my nineyear-old daughter.

I listen to the parents and to the kids; ask lots of questions, so I can get to know the children well; and create unexpected outdoor activities that help them increase their joy, curiosity and wonder.

We are a full-service design firm with the best construction crew in the business, and offer remodeling, renovation home flips, commercial design, a color specialist, new home construction, additions, flooring and window treatments, plus furniture and décor accessories. Our professional team has been featured on TV and in publications. I had always been extremely creative, and give credit to my private education where I received the initial training and developed a love of the arts and an eye for color and composition and design. Early on in my career, I was a guidance counselor; after being published in one local design show, Fabulous Finishes took off! I received corporate sponsors, and the rest is history. I’m so blessed to have a company—located in the community I call home—that’s been in business for over 26 years, and still going strong!

What life accomplishments are you most proud of?

Who is your role model in business or in life, and why?

Raising my daughter as a single parent, obtaining the rank of Eagle Scout, graduating college, and getting my professional engineering license as a civil engineer in California.

My parents—all four of them. They are successful entrepreneurs and taught me to have a strong work ethic, creativity, morals, leadership, compassion and faith; what’s more, they’ve given me the guidance and foundation to be the successful woman I am today.

Why is your staff the best in the business?

Where do you go when the going gets tough? My small group from church and my parents. We share life together and support each other during tough times.

What’s your hidden talent? Sound engineering for live sound reinforcement. I love being behind the scenes helping to create awesome sound for the audience.

What’s your favorite place to eat out locally? Paul Martin’s American Grill or Umi Sushi.

If you could be in any other profession, what would it be? Clinical child psychologist.

And finally, customer service is…?

What’s your biggest job perk? The flexibility to be with my husband and travel, in addition to working with fabulous people and making their dreams come true.

What’s your favorite place to eat out locally? Visconti’s Ristorante. It’s a family-owned business that treats you like family, and their food is the best!

And finally, customer service is…? The most important attribute in my firm. We all take great pride in making sure our clients have the most amazing and over-the-top experience working with us. “Creating beautiful environments for people to work and live in” has been the key to a successful business for over 26 years.

Recently it’s become fashionable to criticize “participation trophies.” According to some, they’re to blame for nothing less than weakening the resolve of entire generations, putting the very foundations of our country at risk. To which I say, really? Personally, I see nothing wrong with handing out trophies, ribbons or, heck, little gilded lollipops at the end of a season. Now, I’m not talking about older kids—high school or even youth sports’ upper levels. But letting a six-, seven- or eight-year-old know their participation meant something…? I have zero problem with that. least, the natural…they don’t need a coach or hardware to tell them that.” What they do instead, he suggests, is acknowledge a child’s commitment to something bigger than themselves for one of the first times in their lives. Football coach Casey Taylor, recently of powerhouse Del Oro but now at Capital Christian, doesn’t think participation trophies lend a sense of entitlement either. Instead, he’s more concerned with pay-to-play competitive (or “comp”) sports teams giving many kids—and parents— unrealistic ideas of a young athlete’s ability. A youngster, he says, “might be on a comp team, but that doesn’t mean they’re good.” At the youth level, he’d like to see more emphasis put on learning—and simply learning to enjoy—a game, and he thinks parents and youth coaches “get too caught up in wins and losses. It’s gotta be more about the game, the journey.” Sports, he says, are not only a chance to “learn life lessons like self-discipline and working with others,” but they’re also something to simply enjoy well into adult life at a recreational level. A slightly different take on participation trophies comes from Jason Harper, founder of the high school sports motivational program Character Combine. He’s mostly not a fan. “At entry-level, I can understand,” he says, comparing them to medals earned for completing a marathon. But even then, he thinks it’s important that the “why” be explained, otherwise, it “creates an idea that as long as you show up, you’ll be rewarded, and that’s not how life really is. You have to show up and compete or you’re not going to play…or be employed.” And I don’t disagree…for older kids. But at the youngest levels, kids participate for different reasons: some because they want to, some because they think they might want to, and quite a few because their parents want them to. Regardless, that’s as it should be—you won’t know unless you try, right? And to me, try is a word that doesn’t get enough credit. Can you remember the last time you tried something new? Something really outside your comfort zone? Me either. Now, think about a first, second or third grader. For many of them, that’s exactly what they’re doing. That sort of effort should be rewarded, because at that age how they did doesn’t matter. That they did, does. There’s your “why.” But there’s one other reason that didn’t occur to me until I contacted Matt Goodell. “It’s funny you asked about that,” he said in an initial email exchange. “My 15-year-old just yesterday pulled out his trophies—participation to individual accolades—from a stored container and placed as many on his window sill that he could fit. I asked him why he did it, and he said ‘I don’t know.’ Typical teenager response, right?” But, he added, “as we sat there staring at them, I realized the appreciation he has for every one of them.” Each, Goodell realized, “tells a story, a memory, a moment in time…” And that’s a pretty decent reason, too.
